What’s For Dinner: Meatloaf and Mashed Potatoes

When I sit down and start planning meals that I want to master in my kitchen, I tend to turn toward my favorite meals from when I was a kid. My siblings were picky eaters, so that often translated into a limited menu. Mom soldiered on, though, and made the best of those limited options.

Except when it came to Fried Chicken.  For that, she went with the Colonel’s Original Recipe.

I decided to check out the world of meatloaf and mashed potatoes. While I don’t know if anything will ever beat my mom’s version, these options sure give her a run for her money.
